It's Palak time !!!

Spinach Pulao / ಪಾಲಕ್ ಪುಲಾವ್ 



                   Hello friends, Hope you all doing good.I am back with another simple recipe and this time it is Spinach/Palak pulao.

Palak is rich in vitamins and high in nutrients and good for health.They also provide protein, iron and minerals.Its good to include greens in our food and especially if kids are not willing to eat then this could be one of the way to include in their meal 😉.

Usually we make palak sambar or Palak paneer so i thought this time let me try pulao from it.This is a very simple dish made from palak leaves.Though i did not add veggies ( as i had no veggies 😣) ,it was tasting delicious😋 but you can also add vegetables like beans, carrot, potato and peas to this recipe.

I have used sona masoori rice, you can use basmati rice as well to make this recipe .This can be served for breakfast, lunch or dinner.

Ingredients

Oil - 3 tbsp
ghee - 1 tbsp
Bay leaf - 1
Cloves - 3
Cinnamon - 2 inch
Cardamom - 2
Star anise - 1
Jeera - 1/2 tsp
Onion chopped - small size 1
Tomato Chopped - small size 1
Ginger Garlic paste- 1/2 tsp
Palak chopped - 1 bowl
Chillies - 5 to 6
Water - 1.5 cup
Sona masoori rice - 2 cup
Salt as required 




In a pressure cooker , Heat oil and ghee and then add bay leaf,star anise,cinnamon,cardamom,cloves and jeera and saute them till they splutter



Further add chopped onion and ginger garlic paste and saute until onion turn slightly golden brown



Add chopped tomato and saute until its fried slightly in the oil



Meanwhile , Add washed and chopped palak leaves and chillies to the mixer along with half cup of water (from 1.5 cup of water) and make it to fine paste


Add Palak puree to the sauteed onion, tomato and spices and mix well (Once palak puree mixed with onion, tomato color changes)


Palak once cooked well leaves raw smell and also separates oil as shown in the picture


Further add washed rice to the palak and saute for 2 mins 


Add remaining 1 cup water to the rice along with salt and mix well.Cover the lid and pressure cook until 2 whistle and switch of the flame


Open the lid once the pressure falls down to have a finer texture or else the rice will get sticky and doesn't taste good.

Palak Pulao is ready to be served with cucumber raita or green chutney.
