Bitter-gourd fry / ಹಾಗಲಕಾಯಿ ಫ್ರೈ 



                               The name bitter-gourd itself make us say NO to it ...isn't it ??? Don't worry this dish will not make your taste buds bitter.

Today i am going to share with you all a crunchy & crispy bitter-gourd fry and guess what ??? ....These are made from my own garden which is why more special to me 💗 and ....

This dish is made usually during festival time (konkani side) by just marinating them in salt and deep frying them in oil but i have added extra ingredient to make them taste even more delicious.

Marinating & deep frying helps in removing bitterness from the gourd and if you are one who doesn't like bitter-gourd then this is a must try recipe.This bitter-gourd fry will taste yummy when served with sambar rice or curd rice and also can be served in the evenings along with tea.

Ingredients

Bitter-gourd - 2 medium size 
Chilli powder - 1 tsp
Gram flour - 2 tbsp
Salt as required
Oil for deep fry

How to make Bitter-gourd fry step by step with photo


Wash bitter-gourd and chop them to thin round shape (If you want you can remove seeds or may include while chopping them )


Add salt as required , You can also just add salt to bitter-gourd and marinate about 20mins and drain salt water & deep fry them in oil 


And then add chilli powder about 1 tsp , if you want more spicy you can add accordingly


                                Further add gram flour 2 tbsp.

Gram flour adds texture to the bitter-gourd along with salt and chilli powder 




Mix them well using hand to combine all ingredients.Just turn around for 30 seconds and close the lid.Allow it to marinate for about 20 mins.


Open the lid and mix them again using spoon.The bitter-gourd is ready to be fried in the oil


In a kadai , Heat oil and add the marinated bitter-gourd one by one using spoon.


Deep frying bitter-gourd at a medium flame will help in removing the bitterness from the gourd


Turn over couple of times and fry until they are golden brown & crispy.Sieve fried bitter-gourd and add them to a plate


Bitter-gourd fry is ready to be served for a quick evening snack or add them as a side dish for curd / sambar rice.
