Its Idli & Malabar !!!

           I am back with another recipe after a slight gap as i was busy with other stuff and this time i have got you very simple and different dish called Malabar Spinach idli.

Just wanted to tell you my story on how i came up with this special recipe.Usually using Malabar Spinach,we make dosa at home and as we are growing this plant at my place so we often prepare dosa out of it.So this time when we prepared dosa , there was few batter left which i thought of steam cooking them.

So..... Yes i did try the idli and the taste was good but the idli was hard.Though it felt like steamed from outside ...the idli was not tasting good from inside and not cooked.But i did not give up as i knew the steam cook tasted good so i did slight variations in the quantity and the result was of course good.

Follow the quantity that i have mentioned below and the idli will definitely turn out very soft ,spicy ,tasty and fluffy.

I have used cooker bowl to make this idli but you can also use Idli cooker or electric cooker as well.This taste good when served hot with coconut oil but if you don't like coconut oil then you can also use cooking oil.

Ingredients 

Raw rice - 2 cup 
Dry chillies - 10 
Coconut - 1 cup grated
Water - 1/2 cup
Malabar Spinach - 1 cup chopped
Salt as required

( Soak rice for 2 hours )

Malabar Spinach idli step by step

  1. Firstly soak rice for 2 hours ( You can use raw rice or dosa rice )
  2. Grind the soaked rice ,dry chillies and grated coconut to a smooth pouring consistency batter adding little water.
  3. Transfer the batter to a bowl and add chopped Malabar spinach and mix well.
  4. Once you add spinach , the batter will become little thick so you might have to add little water for the consistency.
  5. Finally add salt and mix well 
  6. Take Idli cooker or cooker bowl ,grease them with oil
  7. Transfer the batter to the bowl and spread them evenly on all the sides
  8. Steam cook them for about 20 mins
  9. Take tooth pick or knife insert them inside idli to check whether it is cooked, if batter is sticking to the tooth pick then steam them again for 10 mins.
  10. Serve this hot with coconut or cooking oil.
NOTE
  • Consider 2:1 ratio while preparing this idli i.e. 2cup rice:1cup grated-coconut otherwise the idli will be hard.
  • If you want you can increase quantity of coconut, the taste will be good and idli will be more soft.
  • Add chillies according to your taste.
  • I have used cooker bowl to make this recipe but you can also use idli cooker and prepare this dish.
  • I personally prefer coconut oil on top of idli and it taste delicious but if you don't like ,use cooking oil.
  • Make sure to serve this hot not cold.Cold idli doesn't taste so good and also will be very dry.
