Muskmelon custard/ಕರಬೂಜ ರಸಾಯನ
I am super excited to share my first ever post and as the sayings goes on "Good things start with a sweet", So can it get any better than sharing a yummy dessert.
Presenting to you all, A very delicious konkani dessert.This is usually made with muskmelon but you can also add other fruits like banana, apple, grapes and dry fruits as per your taste to make this custard.
This desert was learnt from my father who is a konkani brahmin. I remember my father narrating how they used to enjoy this dessert in the evenings and especially prepared during summer as this is very healthy and also keeps the body cool.My mother is a madhva brahmin and i enjoy cuisines from both the sides.
Coconut is the main ingredient for most of the konkani dishes and this dessert is also made using coconut.This can be served after lunch or also be relished in the evenings.This is one of the most favorite dessert enjoyed by my family and friends.

Ingredients
Muskmelon chopped - 1 cup
Banana Chopped - 1/2 cup
Coconut (Chopped/grated)- 1 cup
Jaggery (powdered) - 2 cup
Cardamom - 2
Flattened rice (Optional) - 1 cup
Water -1.5 cup
Almond and dry grape for garnish
Grind jaggery ( I have used semi powdered),coconut and cardamom to fine paste by adding 1.5 cup of water.This will blend together nicely and give us yummy delicious rasayana.
Take a bowl and sieve the rasayana and keep it aside.This will help us filter only the liquid from the coconut and jaggery.
Add Muskmelon ,banana and rasayana to a bowl and mix well. Refrigerate for an hour.
Before serving add flattened rice(poha) and Almond and dry grape for garnish.

You can avoid Flattened rice if you don't like and only add fruits of your choice.
