Lady's finger Fry |ಬೆಂಡೆಕಾಯಿ ಪಲ್ಯ

Today i am bringing to you all yet again simple & tasty recipe i.e.Lady's finger fry or Bhindi fry / Bendekai Palya.
Of course ...there are endless recipe on the internet but i promise this to be different + easy.
Interestingly if you are wondering how i chopped this veggie is.... by using Potato slicer.Yes you heard it right ... I have used slicer and sliced them similar like potato chip slice.( reference sliced Bhindi Pic below)
The reason behind using slicer is to help you save time in chopping and also as 1 kg of lady's finger will give you about 250 or 300 grams of Bhindi fry.Because the moment you start frying them in oil , the quantity reduces to almost 70 to 80%..So this is best way you can use them in the recipe.
Ensure to wash the vegetable thoroughly and wipe them in dry cloth before slicing them.This helps in preventing stickiness and sogginess and gives you nice dry fried texture.
We prepare this especially to eat with rice and ghee but you also can serve with chapati or roti.
Ingredients required :
Oil - 1/4 cup
Mustard seeds - 1/2 tsp
Turmeric powder - 1/4 tsp
Lady's finger - 1 kg
Chilli powder - 1/2 tbsp
Salt as required
- Firstly wash Veggies thoroughly and wipe them in dry cloth.And then using Slicer , slice all Bhindi and keep them aside
- In a Pan, Add oil , mustard seeds and turmeric powder
- And then add all Bhindi and fry them in medium flame.
- Toss them until Bhindi is cooked well & all the stickiness is gone.(Approximately it takes about 15 to 20 min)
- Once Bhindi is nicely fried , add salt and chilli powder and toss for 5 mins and switch off the flame
- Lady's finger fry /Bhindi fry / Bendekai palya is ready
NOTE:
- If you dont want to use too much oil , Then skip and add curd while frying the bhindi which helps in removing stickiness.
- Adding 1/4 cup of oil , helps in getting crunchy bhindi's.
- This recipe is specially curated for rice so just chilli powder makes it tasty but adding any other additional masala is your choice.
- 1 kg of Bhindi gives you about 250 to 300 grams of Bhindi fry so plan accordingly
- You can also chop them normally using Knife
